The tendrils of spring on the Front Range are beginning to emerge. Farmers are taking full advantage of hoop houses and crop coverage to begin growing all the beauty of spring produce. Here along the Front Range that means SPINACH! We will be awash in this delicious spring green for months to come. My favorite part of spinach season is now. Late winter, early spring. We begin to see overwintered spinach, which has been covered and grows through the winter. The cold weather triggers the plant to begin producing its own “antifreeze” to protect itself in the form of sugar. As a result, this spinach is extremely sweet and its leaves are thicker and hardier. In the grocery store, purchase the bunched mature spinach rather than the plastic packaged baby spinach.
